New House Update

We will be closing on our house this month. FINALLY! Short sales take a lot of time, but are worth it if you can sit and wait for the bank.

Troy plans on putting in a horseshoe pit straight away & I plan on getting that hot tub going. It's all about the priorities :)

Pending having the spa guy come out and Troy digging the horseshoe pit, we will be hosting a House Warming/Thanks for Helping us Move (Again)/Engagement Party. Details on that shortly, but we are looking at a mid to late July party.

I'm sure there will be plenty of beer, fire, fireworks, hot tubing, horse shoeing etc.

Megan's 15th Birthday

We started Megan's birthday celebration with "All You Can Eat Crab Legs" on Wednesday.
Megan ended up ordering 5 plates. I helped her stay on top of things by cracking the legs and making nice little crab meat piles for her. Delicious. - Crab is in direct competition with Lamb in my book. Hopefully prices & availability won't go up too much after this cluster F of an oil spill - Snow crab should be ok right?!

Megan has been saving all her $ for a new laptop. After straight A's this year, she really needs one! Her birthday cake was Tres Leches from Cafe Latte in St. Paul... "Three Milks" – sweetened condensed, cream and whole milk poured over rich sponge cake and finished with whipped cream and fresh raspberries.

Father Hennepin Camping

Father Hennepin Campgrounds

Our first camping trip of the year was at Father Hennepin on Lake Mille Lacs.
Due to a layover in St. Paul, we didn't arrive at our campsite till nearly 9:00pm Friday evening. The mosquitoes were TERRIBLE. Troy bought a backyard fogger and we were much more comfortable after that - check out the first photo of Sam's back to see the damage they did to my babies :( Poor kids were itching all weekend.

Glad to get back to tent camping for the weekend and looking forward to more s'mores and hot dogs on the fire this year.

Academic Award

Megan earned her an Academic Award this year for maintaining a grade point average of 3.75 or above. I am VERY VERY proud of her and all of the hard work she has put into her Freshman year.

Sunny San Francisco

:) For once San Francisco was SUNNY.

We had a very nice time in San Francisco visiting the pregnant Flannery & her husband Mike.
By the looks of her belly, she will be having a girl.

Highlights of our trip included a tour of Anchor Steam Brewery, Muir Woods - coastal Redwoods, Muir Beach (the ocean) Twin Peaks, The View from our hotel balcany & SHOPPING.

Troy found a fabulous "Bob Wills is Still the King" painting & I scored an antique jewelry box for Miss Megan. Not a lot of pics on this trip - Most are still on Troy's camera.

Lamb Chop - Lamb is Delicious

Lamb is delicious. I would have to say that lamb is the best meat on the planet.
The first time I tasted lamb was in the 7th grade. I was at an overnight with my friend Melody Sanders. Her parents owned a self sustaining farm just outside of my hometown of Vinton. During my stay, her parents offered me a left over lamb chop from their dinner the night before. I'm pretty sure I ate it cold, straight from the fridge. It was ablsolutely delicious.

Since eating that lamb chop, I was unable to aquire more lamb until well into adult hood. Following my first lamb experience, the only lamb I had been exposed to was lamb at a buffet stiyle restaurant. It was freeze dried lamb, and nothing as flavorful as that first lamb chop.

In the last year, I have eaten more lamb than ever before in my life.
My boyfriend cooked me a beautiful lamb dinner shortly after we started dating, I was able to order lamb in fancy restaurants during our subsequential dates, lamb was recently introduced at our local grocery store, and most recently I had lamb at a fancy french restaurant in St. Paul.
Guess what?! Tonight, I am cooking LAMB!
